The following study focuses on the semiotic and spatial analysis of the process of making arancina palermitana. It will highlight that recipes are complex programmes of action that organise spaces and produce objects of value and will recount the process of recipe making using a methodology of socio-semiotic and architectural analysis. Furthermore, the individual phases of preparation and consumption in which different human and non-human actors co-act will be presented. Finally, the arancina will be “mapped”, creating a cartography of the recipe that represents the complex entanglement in which gestures, materials, objects and meanings are hybridised. The ethnographic research field of the article will be a Palermo-based company producing arancina, where both the recipe itself and the mechanisms of communication will be investigated.
